This recipe makes a light-crispy-chewy sugar cookie. I developed the recipe from reviewing a number of sugar cookie recipes. This one is quick and easy since no rolling is required; simply scoop and bake.
TallCakes Sugar Cookies
(makes 3 dozen)
5 ounces (1 1/4 cups) AP flour
5 ounces (1 cup) bread flour
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp coarse salt
10 tbsp unsalted butter
9 ounces (1 cup + 3 tbsp) granulated sugar
1 large egg
2 tsp vanilla Jack
vanilla sugar for coating
Preheat oven to 350˚ F
Mix the first 5 dry ingredients together and set aside.
Add butter, granulated sugar, egg and vanilla to a mixing bowl and mix with paddle for 3-5 minutes until creamy. Add the dry ingredients to the wet and mix until well blended. Cover with plastic wrap and set mix aside to rest for at least an hour, preferably longer; can be covered and refrigerated at this time, and held to make the next day.
When ready to bake bring the dough to room temperature. Place the vanilla sugar in a separate bowl. Scoop dough using a 1 tbsp cookie scoop. Place scoops of dough into the vanilla sugar and fully coat. Place cookie dough, dome-up, on silicon or parchment lined baking sheet. Bake for 11 minutes or until lightly golden. Remove cookies from the oven and allow them to cool for 5 minutes on the baking sheet. Remove with a spatula to a cooling rack to thoroughly cool.
