Vanilla Jack Vanilla Bean Gelato
adapted from Making Artisan Gelato
1 vanilla bean
2 cups whole milk
1 1/2 cups heavy cream
3/4 cup granulated sugar
2 tbsp Vanilla Jack*
Add the milk, heavy cream and sugar into a heavy saucepan. Split the vanilla bean in half with a pearing knife and scrape the seeds from each half. Add the split vanilla bean and seeds to the saucepan. Stir to combine over medium heat to dissolve the sugar. The mixture should register between 170º and 180º on an instant-read thermometer. Remove from heat, cover and allow to steep for at least a half hour.
Remove the vanilla bean pod from the mixture and stir in the vanilla Jack. Pour gelato mix into a clean bowl and cover with plastic wrap. Refrigerate the gelato mix until thoroughly chilled or overnight.
Pour the chilled gelato mix into the ice cream maker and process according to manufacturer's instructions. Put frozen gelato into freezer safe containers to fully harden before serving. It's also great soft-serve at this point as well.
*for Vanilla Jack split 6 vanilla beans and put them into a liter of Black Label Jack Daniel's whiskey. Allow to set at room temperature of at least 6 weeks. You now have Vanilla Jack.
