3 1/2 cups milk
4 ounces sweetened flaked coconut
Put the milk and coconut in a sauce pan and bring to a boil. As soon as the milk reaches a boil remove from the heat and set aside to steep and cool for 10 minutes. Buzz the milk and coconut with a stick blender to further enrich the milk with the coconut. Strain the coconut milk through a fine sieve, expressing milk from the coconut pulp and discard the pulp.
1 1/2 cups granulated sugar
Zest from 2 limes
While the milk and coconut are steeping, put the sugar and lime zest into the food processor. Process for a full 2 minutes until the lime is fully incorporated into the sugar.
3 large eggs
1/4 tsp salt
1 tbsp corn starch
Juice from 2 limes
Whisk the eggs, salt and corn starch together in a large bowl. Now whisk in the lime-sugar and lime juice and then whisk in the coconut milk. Pour the mixture back into the sauce pan on medium heat. Cook on medium heat until the mixture thickens at about 190˚ before removing from the heat. Return the mixture to the mixing bowl.
2 ripe bananas - chopped
1 cup heavy cream - cold
3 tbsp rum
Add the chopped bananas to the mixture and puree with a stick blender. Whisk the heavy cream into the mixture and then whisk in the rum. Allow to cool to room temperature before placing in the refrigerator to completely chill. (Alternately place bowl in an ice bath to chill.) Pour the fully chilled mixture into the ice cream maker and freeze according to manufacturer’s instructions. Transfer the gelato into freezer safe containers and freeze for several hours before serving.
