Stovetop Peanut Butter Oatmeal Fudge

1 1/2 Cups Granulated Sugar
3 Tbsp Water
Heat sugar and water together over medium high heat until the sugar melts and is caramelized to a medium light caramel color.
1 Cup Heavy Cream
Stir the heavy cream into the caramelized sugar. Be careful not to spatter. The sugar will tend to crystallize when the cream is first added, so continue to stir over medium heat until the mixture is smooth before reducing to low heat.
1 Cup Crunchy Peanut Butter
8 Ounces Bittersweet Chocolate - chopped (may substitute semisweet chocolate)
Stir in the chopped chocolate and peanut butter until well blended, and then remove from the heat.
3 Cups Quick Cooking Oats
1 Tbsp Vanilla Jack
Thoroughly stir in the oats, which will allow the mixture to cool down a bit, before stirring in the vanilla.
2 Generous Pinches Coarse Salt
Pour the fudge mixture into a buttered pan and spread evenly to desired thickness; I like it at about a 1/2” thick. Alternately you could drop by the spoonful onto to a buttered pan for a more rustic look. Lightly sprinkle the coarse salt over the fudge. Allow to cool to room temperature before placing in fridge to cool and set. Cut fudge to desired size and enjoy!

Fudge may be stored in the fridge in a airtight container with layers separated by parchment.
