Strawberry White Chocolate Gelato
Adapted from Making Artisan Gelato

There just no better destination for fresh strawberries than to end up in this creamy frozen confection.

For the macerated strawberries:
2 lbs fresh strawberries
3/4 cup granulated sugar
Juice from 1/2 lemon
3 tbsp Grand Marnier

For the gelato:
2 cups whole milk
3/4 cup granulated sugar
Pinch of salt
4 egg yolks
4 ounces white chocolate (chips or chopped)
4 cup ± drained macerated strawberries
1 cup heavy cream
3 tbsp Grand Marnier

Prepare the macerated strawberries:
Core and slice the strawberries into a large bowl. Sprinkle the sugar, lemon juice and Grand Marnier over the strawberries and stir to combine. Set aside on the counter to macerate for 2 hours and stir every 5 minutes or so until the juice begins to accumulate. Using a slotted spoon remove the strawberries from their juices or drain with a sieve. You should have around 4 cups of drained strawberries. Retain the juice for another use; try freezing for strawberry pops or sorbet.

Prepare the gelato:
Whisk milk, salt and sugar together in a heavy saucepan and heat to 190˚; remove from heat. Meanwhile whisk the eggs yolks in a separate bowl. Temper the egg yolks by carefully whisking in some of the heated mix from the saucepan. Whisk the tempered eggs mixture into the remaining mix in the saucepan. Return mix to heat and stir/whisk continuously until mix reaches 185˚. Remove the saucepan from the heat and add the chocolate to the hot custard and whisk to blend. Add 2 cups of the drained strawberries to the custard and mix in with a stick blender. Stir in the heavy cream and the Grand Marnier.

Transfer the mix to a bowl, cover the bowl with plastic wrap and refrigerate the gelato mix for 6-8 hours or overnight to thoroughly chill. When ready, pour the chilled mixture into your ice cream maker and process according to manufacturer’s directions. Remove gelato from ice cream maker into a large bowl and stir in the remaining 2 cups of drained strawberries. Put the gelato into freezer containers and place in freezer to fully harden.
